The ingredients needed to make Bicol express:
  1. Get 1 1/2 cubed pork shoulders
  2. Get 1 onion diced
  3. Prepare 3 cloves garlic (minced)
  4. Take 1 serrano pepper/labuyo (or more accdg to spice preferences)
  5. Prepare 3 tbsp shrimp paste
  6. Prepare 1 cup coconut milk

Bicol express is a spicy Filipino stew consisting of bite sized pieces of pork with chilies, coconut milk, shrimp paste (bagoong), onions, tomato and garlic. The dish is named after the train in the Bicol. In a cooking pan, heat cooking oil and brown sliced pork for a few minutes. Named after the train that travels between Manila and Bicol, this popular Bicolano dish will make you reach for water faster than the bullet train.

Instructions to make Bicol express:
  1. Sauté pork shoulder on a pan set on high heat with continuous mixing until fat browned and fat is rendered. Remove excess oil.
  2. Add garlic cook until browned and onions until transluscent.
  3. Add shrimp paste and mix until incorporated with ingredients.
  4. Pour coconut milk and let it simmer for 5 mins before adding chili. (this is to make sure that the spice is evenly distributed to the ingredients).
  5. Continue mixing until sauce thickens depending on your preference. (Some like it with a little sauce, I like it a bit dry.) Don't it will taste great just the same.😊
  6. Best served with white steamed rice. Enjoy.
