The ingredients needed to make Duck/Plum Sauce:
  1. Make ready Sauce part I
  2. Take 6 ounces plums
  3. Take 1/3 cup apple cider vinegar
  4. Prepare 1/3 cup sugar
  5. Prepare 1/2 teaspoon granulated garlic powder
  6. Prepare 1 teaspoon salt
  7. Get 2 tablespoons brown sugar
  8. Get 1/2 teaspoon mustard powder
  9. Make ready 1/4 teaspoon ground cinnamon
  10. Get 1 tablespoon soya sauce
  11. Get Sauce part II
  12. Make ready 6 ounces dried pitted apricot
  13. Take 1/3 cup apple cider vinegar
  14. Get 1/3 cup sugar
  15. Get 1/2 teaspoon salt
  16. Make ready 2 tablespoons brown sugar
  17. Get 2 tablespoons Chinese black vinegar
  18. Make ready 1/2 teaspoon ground ginger powder
  19. Prepare If needed
  20. Take As needed water to thin the sauce

Instructions to make Duck/Plum Sauce:
  1. Halve and Pitt the plums. Sprinkle with a little salt. Add to a pot.
  2. Add the rest of the sauce ingredients part I, to the pot. Simmer 20 minutes.
  3. Check the dried apricots for pitts and pit fragments. Slice them in half.
  4. Add to a pot with the ingredients of sauce part II. Simmer 20 minutes.
  5. Add to a blender both parts of the sauce. Blend till smooth. Thin with water if to thick. Chill in the refrigerator overnight.
  6. If possible make this the day before. Serve with Duck, Chicken, Turkey, Pork, and Lamb. I hope you enjoy!!!
