The ingredients needed to make Spicy duck egg masala / hanser dim kosha:
  1. Prepare 4 no duck eggs
  2. Make ready 2 no potato cut into quarters
  3. Prepare 1 cup thinly chopped onion
  4. Prepare 1 no chopped tomato
  5. Get 1 tablespoon ginger and garlic chopped
  6. Get 3 tablespoons mustard oil
  7. Get 1/2 teaspoon turmeric powder
  8. Make ready 1 teaspoon cumin powder
  9. Make ready 1 teaspoon garam masala powder
  10. Take 1 teaspoon sugar
  11. Take to taste Salt
  12. Take 1 teaspoon cumin seeds

Instructions to make Spicy duck egg masala / hanser dim kosha:
  1. Heat mustard oil in a heavy bottom pan and fry egg and potatoes when it change it's colour.
  2. Boil egg with generous amount of salt. Peel and slit.
  3. Now all the chopped onions, tomatoes, ginger and garlic in a blender and make a smooth paste.
  4. Now heat oil in a pan add cumin seeds fry until fragrant, then add the onion paste and fry for few minutes. Then add fried egg and potatoes.
  5. Now add the all spices powder and fry it until the masala are well fry and the raw small are goes on. Then add 1 cup of water and cover it allow to cook for 10 minutes in low medium heat.
  6. Once done cover the pan and switch off the flame. Keep on stand by for 10 minutes. This will help masala and eggs to incorporate the flavors.
  7. Serve it steam Rice and Enjoy.

This exotic curry is full of flavours and quite rich in taste. It is slightly different from Dim er Dalna or Everyday Egg Curry. Dim er Kosha is spicier, tastier and thicker than regular Dimer Jhol. Dimer kosha is a popular Bengali style spicy oily Egg curry, very much different from the rgular Dimer Dalna. After few seconds you will see the oil has started oozing from the masala.
