The ingredients needed to make Black Rice Cake:
  1. Make ready 1 cup Black Rice
  2. Make ready 1/2 cup Whole wheat flour
  3. Take 3/4 cup Sugar
  4. Prepare 1 tbsp Vinegar
  5. Take 1/2 tsp Baking soda
  6. Make ready 1 tsp Baking powder
  7. Get 1/2 cup + 2 tbsp warm milk
  8. Get 1/2 cup Canola oil or any unflavored oil
  9. Make ready 1/8 tsp Cardamom powder
  10. Prepare 2-3 tbsp pistachios, almond and cashewnut chopped
  11. Take as needed Powdered sugar for dusting (optional)

Steps to make Black Rice Cake:
  1. Soak the rice for 3-4 hours or overnight. Drain it and sun dry it, not necessary to dry them completely. Grind them into a fine powder.
  2. In a mixing bowl add the black rice flour, whole wheat flour, baking powder, cardamom powder.
  3. Mix well and incorporate them nicely.
  4. In a mixing bowl add the vinegar, baking soda, mix well and let it stand for 5 mins. Add sugar, milk, oil and mix.
  5. Add the wet ingredients to the dry ingredients and gently fold it to make a smooth batter.
  6. Preheat oven @180 for 10 mins. Grease a cake pan with oil and keep aside. Pour the batter into the greased pan and tap the pan for 2-3 times.
  7. Sprinkle the chopped nuts over it.
  8. Bake the cake for 35 mins. Start checking from 30 mins onwards. A tooth pick inserted should come out clean.
  9. Remove from oven and let it stand for about 5 mins.
  10. Demould, cut and serve.
