  1. Prepare 2 cups rice flour
  2. Get 1 cup black gram skinless
  3. Take 200 g sugar
  4. Make ready To taste salt
  5. Make ready 1/2 cup grated coconut
  6. Take 1/3 cup coconut slices (small)
  7. Make ready 4-5 green cardamoms crushed
  8. Get 1 tsp fennel seeds
  9. Get 50 g cashewnuts (broken)+raisins
  10. Take 1/2 tsp baking powder
  11. Take 1 tbsp ghee

Steps to make PODA PITHA (Baked Rice Cake):
  1. Soak black gram in water for about 5-6 hours. Wash it thoroughly and grind to a fine batter. Transfer the batter to a big bowl.
  2. Add the rice flour and salt to it. Mix well. Keep it covered and set aside for about 5-6 hours for self fermentation.
  3. Next add all the ingredients like sugar, grated coconut, coconut slices, cardamom, fennel seeds, cashewnuts, raisins and baking powder. Mix all the ingredients well.
  4. Heat a non-stick frying pan. Add ghee and spread it on the entire surface.
  5. Now pour the mixed batter into the pan. Spread it evenly and cover it with a lid. Cook on a low flame for about 10 minutes.
  6. Open the lid and flip it gently. Add ghee a little, cover and let it cook for another 10 minutes. Then remove from the heat.
  7. Now the Poda Pitha is ready. Take it out from the pan, cut into desired shapes and serve.
