The ingredients needed to make Shiso (Basil) & Lemon Rolled Chicken:
  1. Get 2 Chicken Breast Fillets
  2. Take 200 g Chicken Mince
  3. Get Zest of 1/2 Lemon *grated
  4. Take 8 Shiso Leaves *OR a handful Basil Leaves, thinly sliced
  5. Take 1 clove Garlic *gated
  6. Take 1/4 teaspoon Salt
  7. Prepare Pepper
  8. Make ready 1 tablespoon Oil
  9. Make ready <Sauce Ingredients>
  10. Get 4 tablespoons Sake (Rice Wine)
  11. Make ready 2 tablespoons Soy Sauce
  12. Get 1 tablespoon Lemon Juice
  13. Get 1 tablespoon Mirin *OR 1 teaspoon Sugar
  14. Prepare 1 teaspoon Potato Starch Flour *mixed with 1 tablespoon Water

We are excited to harvest our red shiso (also known as Japenese Basil). We like to plant things that not everyone has in their garden. I love red shiso because it adds color to the garden, as you can see in the picture below. Shiso plant is an annual variety with frilly, beautiful leaves.

Instructions to make Shiso (Basil) & Lemon Rolled Chicken:
  1. Combine Chicken Mince, Lemon Zest, Shiso (OR Basil) Leaves, Garlic in a bowl, season with 1/4 teaspoon Salt & some freshly ground pepper.
  2. Slice Chicken Breast Fillets in half and carefully flatten with a meat mallet to about 1cm thickness or thinner. Season the top with salt & Pepper.
  3. Spoon 1/4 of the mince mixture over chicken in a strip along a side. Roll up and secure the ends with toothpicks. Repeat to make 4 chicken rolls.
  4. Heat Oil in a large frying pan over medium-high heat, place chicken rolls, seam side down, and cook until browned all over and the mince mixture is cooked.
  5. Transfer the chicken rolls to a plate and rest.
  6. While the chicken rolls are resting, add Sake, Soy Sauce and Mirin (OR Sugar) to the pan, cook for 1 to 2 minutes over medium heat. Add Lemon Juice and Potato Starch mixture to thicken the sauce.
  7. Remove the toothpicks from chicken rolls, slice thickly and serve with the sauce.
