  2. Prepare 50 grams Sugar
  3. Take 80 grams Butter or margarine
  4. Get 2 Egg yolks
  5. Prepare 2 Egg whites
  6. Prepare 160 grams ★Plain flour
  7. Prepare 2 tsp ★Baking powder

Steps to make Yuzu Jam Cakes:
  1. Cream the butter, add the sugar in 2-3 batches and mix well.
  2. Add the egg yolks one at a time, and mix well.
  3. Mix in the yuzu jam.
  4. Whisk the egg whites in a different bowl and make a stiff meringue.
  5. Add the meringue from Step 4 and the sifted ingredients marked ★ alternately to the bowl from Step 3, half at a time. Cut in and mix.
  6. Pour the batter into cake moulds and bake for 20 minutes at an oven preheated to 180°C. Cool on a rack and you're done!
