The ingredients needed to make Orzo Pasta Soup:
  1. Make ready 2 tbs olive oil
  2. Take 1 bunch washed spinach
  3. Make ready 2 tbsp Corn kernels
  4. Get 2-3 mushrooms
  5. Make ready 2-3 French beans
  6. Make ready 1 onion chopped
  7. Prepare 1 cup chopped carrots
  8. Make ready celery a small piece
  9. Get 1/2 cup whole wheat orzo pasta
  10. Make ready 1 dried oregano as per taste
  11. Get dried Rosemary as per liking
  12. Prepare Garlic cloves minced
  13. Prepare Water or vegetable stock
  14. Get 1 cup diced tomatoes
  15. Get to taste Salt and black pepper

Steps to make Orzo Pasta Soup:
  1. Take oil in a pan
  2. Add onion and garlic, saute until soft.
  3. Add carrots, tomatoes, corn, beans and mushrooms saute for sometime but don't over cook.
  4. Add orzo (pasta), oregano,Rosemary, celery and stir to combine all.
  5. Add vegetables stock or water and cover it.
  6. Bring soup to a simmer, stirring occasionally.
  7. Reduce heat to low flame and simmer for 10 minutes, stirring occasionally, until the pasta is al dente.
  8. Stir in the spinach and cook for 1-2 minutes so that it doesn't lose it's bright green colour. Season with salt and black pepper.
  9. Serve hot.
