The ingredients needed to make Orzo Pasta Salad:
  1. Take 1 C orzo
  2. Take 3 garlic cloves; smashed
  3. Get 1 oz basil
  4. Make ready 1 lemon; zested & juiced
  5. Make ready 1/2 t crushed pepper flakes
  6. Make ready 1/2 red onion; medium dice
  7. Take 1/2 C extra virgin olive oil
  8. Take 8 slices bacon
  9. Prepare 6 large leaves spinach; chiffonade
  10. Make ready 4 oz mozzarella cheese; small dice
  11. Take 3 Campari tomatoes; seeded & small dice
  12. Make ready kosher salt & black pepper; as needed

Steps to make Orzo Pasta Salad:
  1. Combine basil, garlic, red onion, pepper flakes, lemon zest and juice, olive oil, and a large pinch of salt and pepper in a food processor. Pulse until combined.
  2. Bring a small pot of salted water to a boil. Add orzo. Cook until al dente, about 8 minutes. Drain. Spread out on a plate and cool in refrigerator.
  3. Combine orzo, spinach, cheese, and tomatoes in a small mixing bowl. Add dressing. Fold to combine. Cover and let sit in fridge overnight to marinate.
  4. Lay bacon on a baking tray lined with parchment paper. Bake at 400° for approximately 12 minutes or until bacon is crispy. Drain fat and reserve for another use. Pat bacon dry with paper towels. Roughly chop to a small dice.
  5. Fold 3/4 of bacon into salad amd reserve remaining bacon for garnish.
  6.
