The ingredients needed to make Chicken and Chorizo Soup:
  1. Prepare 1.5 lbs chicken medium dice
  2. Make ready 1 lb chorizo sausage-casings removed
  3. Prepare 1 green bell pepper-small dice
  4. Get 1 red bell pepper-small dice
  5. Take 1 med red onion small dice
  6. Take 1 cup shred carrots- can have small dice too
  7. Prepare 1 lemon juiced
  8. Make ready 1 lime juiced
  9. Get 1 TBS minced garlic
  10. Get 2 tsp salt
  11. Take 2 tsp cumin
  12. Make ready .25 tsp saffron or safflower threads
  13. Take 1 bunch parsley minced
  14. Take 1 can whole corn
  15. Take 2 cans rotel- no salt
  16. Prepare 32 oz chicken broth- mine was salt free store bought

Instructions to make Chicken and Chorizo Soup:
  1. Heat 5 quart stock pot over med-high heat. Cook chicken and Chorizo.
  2. Remove chicken and Chorizo from pot.
  3. Using fat from chorizo to sauté garlic, onion, carrots and peppers. Drain excess fat from veggies and discard
  4. Add meat and veggies back to pot. Add the juices, rotel, corn, seasonings, and broth.
  5. Bring to a boil. Reduce heat and simmer for at least 30 min.
  6. When close to be finished cooking add parsley to pot. If using dried parsley add with rest of seasoning.
  7. Serve with rice, beans, fresh cilantro, sour cream, salsa, avocado, etc…
