  1. Take 4 over ripe cucumbers
  2. Prepare 1 whole green & orange pepper
  3. Get 1 large onion
  4. Get 1/2 cup coarse salt
  5. Make ready 1 tsp mustard powder
  6. Get 1/2 tsp tumeric
  7. Prepare 1/4 tsp mustard seed
  8. Get 1 3/4 cup vinegar
  9. Get 1/4 cup brown sugar
  10. Prepare 1/2 cup white sugar

Instructions to make Mustard Relish:
  1. cut peppers and onion into small chunks
  2. peel cucumbers and remove seeds (slice on either side of seeds, use sm spoon to scrape out)
  3. put cut up cukes pepper & onion in salt bath [1/2 cup salt) brine] and let sit minimum 3 hrs -overnight
  4. heat to boiling, vinegar sugar & spices
  5. add veggies, bring back to boil
  6. boil gently until desired tenderness & consistency, add tbsp flour to small part water & add to boiling mixture if needed
