  6. Prepare 5 1/2 cup water
  7. Prepare 1/4 tsp salt for boiling noodles

  1. Place 2cups of flour and salt in a deep mixing bowl, mix well,…make a well in the center of flour, add the eggs all at once and 1 table spoon cold water.
  2. Gradually mix with hands or wooden spoon untill well blended…gather into a ball and knead on floured surface untill smooth, about 10 minutes. if necessary, add remaining flour to keep dough from sticking to surface a little at a time, and keeping ur hands floured..
  3. Divide the dought into thrids.
  4. On a lightly floured surface, roll each section into paper -thin rectangles….dust top of dough with flour to prevent sticking while rolling. trim the edges and flour both sides of dough.
  5. Roll dough, jelly-roll style useing a sharp knife, cut 1/4 inch, slices…unroll noodles carefuly and allow to rest on a floured surface or hang on some thing to allow to dry a little.before cooking pasta.
  6. To cook, bring salt,water to a rapid boil add the oil to the water. drop pasta noodle into boiling water and cook for 7 to 10 minutes, stirring occasionally.untill tender and dont over cook. yields 8 servings.
