The ingredients needed to make Simmered Daikon, Carrot & Pork:
  1. Take 300-400 g Daikon
  2. Take 2 Carrots
  3. Prepare 1 small piece Ginger *sliced into fine strips
  4. Get Water *enough to cover vegetables
  5. Prepare 400-500 g Pork *I used Scotch fillets
  6. Take 2 tablespoons Sugar
  7. Take 4 tablespoons Soy Sauce
  8. Prepare 2 tablespoons Mirin
  9. Prepare 1 teaspoon Sesame Oil *for flavour

Heat the oil in a wok over medium heat. Uncover, add in the rest of the chopped scallion, and mix everything well. Place daikon and carrot in a glass jar with the cilantro and chile peppers. Pour the cooled vinegar mixture over, submerging the vegetables.

Steps to make Simmered Daikon, Carrot & Pork:
  1. Remove skin & cut Daikon about 1-2cm thickness. Cut in half if large. Cut Carrots and Pork into chunky pieces.
  2. Place Daikon, Carrot and Ginger in a large saucepan or pot, add Water just enough to cover. Bring to the boil over high heat and reduce the heat to simmer for 10 minutes.
  3. Add seasoning ingredients and Pork, and bring back to the boil. Reduce the heat to low, cover with lid and simmer for 20 minutes.
  4. Remove the lid and cook over medium heat until the liquid is almost gone.
