  1. Take 1/2 Cabbage, diced
  2. Take 4 Spring Onions, sliced
  3. Get Juice of 1 lime
  4. Take Onion, diced
  5. Make ready 2 (Red, Yellow, Orange) Bell Pepper, diced
  6. Make ready Carrot, sliced
  7. Make ready 50 g Walnuts
  8. Take 1 litre Vegetable Stock
  9. Take Neutral Oil

Steps to make Cabbage and Bell Pepper Soup:
  1. Heat the oil in a pan and fry the onion
  2. When the onion is lightly brownes add the peppers, cabbage, carrot and whites of the spring onions
  3. Cook well untill all vegetables are soft. Then add the stock. Cook for about 15 minutes until vegetables are very soft.
  4. Meanwhile roast the walnuts in a dry flat and for about 30 seconds
  5. When vegetables are cooked, blend add the juiced lime, season with salt and pepper.
  6. Garnish each dish with green parts of the spring onions and some crushed walnuts. Served hot
