The ingredients needed to make Cabbage Roll Soup:
  1. Prepare 1 Tbsp olive oil
  2. Prepare 1 1/2 lbs lean ground beef
  3. Get salt & pepper
  4. Make ready 1 lg yellow onion, chopped
  5. Make ready 2 lg carrots, chopped
  6. Prepare 5 cups packed chopped cabbage
  7. Make ready 3 cloves garlic, minced
  8. Take 2 (14.5 oz) cans low sodium beef broth
  9. Get 3 (8 oz) cans tomato sauce
  10. Make ready 2 (14.5 oz) cans petite diced tomatoes
  11. Make ready 2 Tbsp packed light brown sugar
  12. Make ready 1 Tbsp Worcestershire sauce
  13. Get 1 1/2 tsp dried paprika
  14. Get 1 tsp dried oregano or 1 Tbsp chopped fresh
  15. Take 3/4 tsp dried thyme or 2 1/2 tsp fresh
  16. Take 2 bay leaves
  17. Take 3/4 cup dry long-grain white rice
  18. Get 1 Tbsp fresh lemon juice
  19. Get 1/3 chopped fresh parsley

Steps to make Cabbage Roll Soup:
  1. Heat olive oil in lg cast iron pot over medium-high heat.
  2. Add beef, season with salt & pepper & cook, stirring & breaking up the beef occasionally, until browned. Transfer beef to a plate lined with paper towels while reserving 2 Tbsp of the rendered fat in pan, set beef aside.
  3. Add onion & carrots to pan & saute 2 minutes, add garlic & saute 1 minute longer.
  4. Pour in beef broth, tomato sauce, tomatoes, brown sugar, Worcestershire, paprika, oregano, thyme & bay leaves.
  5. Return beef to soup mixture.
  6. Season with salt & pepper to taste & bring to a light boil, then add rice, cover pot & reduce heat & simmer til rice is cooked through, stirring occasionally, about 25 minutes.
  7. Stir in up to 1 cup of water to thin as desired (it will thicken as it rests & become almost like stew), then stir in lemon juice & parsley
  8. Serve warm.
