  8. Take 750 g carrots
  9. Get 1 large potato
  10. Make ready 1 sweet potato
  11. Prepare 1.5 l chicken stock
  12. Prepare 1 tbsp runny honey
  13. Take 1/2 tsp salt
  14. Get 1/2 tsp pepper

Instructions to make Carrot and Ginger Soup:
  1. Melt the butter and oil in a large pan over medium heat. Add the onion, garlic and ginger and saute over a low heat until golden - should take about 10 minutes.
  2. Add the cumin and curry powder and continue to saute for another minute.
  3. Add the vegetables and stock and simmer until the vegetables are tender - about 30 minutes.
  4. Puree in batches until smooth. Sieve back into the pot and simmer over a low heat. Stir in the honey, salt and pepper.
  5. Serve and get nicely warmed up!
