  2. Prepare 500 g Pork
  3. Prepare 4 medium size red onions
  4. Take 3 carrots diced
  5. Get I green capsicum
  6. Get 2 tomatoes
  7. Prepare 50 g margarine or butter (optional)
  8. Get 3/4 teaspoon Salt
  9. Take 1 teaspoon cinnamon

Steps to make Lyonnaise Potatoes and Fried Pork:
  1. Wash meat and cut.
  2. Take the dry spices (salt, cinnamon and nutmeg) mix in the meat. Set aside for thirty minutes minimum.
  3. Prepare your green ingredients. Wash and cut the capsicum and tomatoes to small squares. Remember to remove the seed core from both of them.
  4. Wash and peel potatoes. Slice them into thin oval pieces.
  5. Blanch the potatoes in hot oil for a few minutes then remove.
  6. Fry the pork in the capsicums and tomatoes. Use two of the onions to fry the pork.
  7. After the pork has been fried and is ready. Take the butter or margarine and add the remaining two onions that have been finely chopped.
  8. Add the blanched potato slices in the hot butter and onions just to heat then up and final cook them.
  9. Serve immediately with the pork and enjoy with a glass of wine.
