The ingredients needed to make Brad's ez pork with curry gravy:
  1. Make ready 1 1/2 lbs pork tenderloin, cut into bite size pieces

Instructions to make Brad's ez pork with curry gravy:
  1. Heat 1 tbs coconut oil in a frying pan. Add pork, garlic, and 1/2 tbs curry powder. Fry pork until just before it is done. Remove to a plate.
  2. In same pan, add 4 tbs coconut oil, and 6 tbs flour. Make a roux. Stir constantly. When flour starts getting a nutty aroma, slowly blend in milk. Stir until you get a smooth gravy. Adjust to your preferred texture.
  3. Add the rest of the curry powder and reserved pork. Heat until pork is done, stirring constantly.
  4. Plate rice and serve over top. Garnish with dry chopped chives.
