The ingredients needed to make Potato Balls (Varra):
  1. Prepare FOR POTATO BALLS:
  2. Make ready 3 potatoes
  3. Make ready 1/2 tsp chilli flakes
  4. Make ready 2 green chillies
  5. Take 1 tbsp grated ginger garlic
  6. Take 1 tsp dry mango powder/ lemon juice
  7. Make ready salt as per taste
  8. Get 5-6 curry leaves (optional)
  9. Prepare 1 tsp crushed corriender seeds
  10. Take 1 tsp cummin seed
  11. Take 1/4 th tsp Turmeric powder
  12. Make ready 3 tbsp Corriender leaves
  13. Take oil for deep frying
  14. Make ready FOR COATING:
  15. Get 1 cup gram flour
  16. Get salt as per taste
  17. Make ready pinch yellow colour
  18. Make ready 1/4 th tsp chilli powder
  19. Take 1 tbsp rice flour
  20. Take 1/4 th tsp Turmeric powder
  21. Prepare 1/4 th tsp Baking soda

These Fried Mashed Potato Balls are crispy on the outside and soft on the inside, perfect as a snack or party appetizer. Add enough water to make a soft batter. Peel potatoes, boil (not too soft) and mash. Add the rest of the geera, salt, onions, garlic and thyme.

Instructions to make Potato Balls (Varra):
  1. Boil potatoes and keep them in fridge for 2hrs. Then by the help if grater, grate them.
  2. In 1 tbsp oil add cummin seeds, grated ginger garlic, curry leaves and green chillies, now add all above mentioned spices and potatoes too. Now bonify for 1-2 min. Add corriender leaves and then keep this mixture in fridge for 2hrs.
  3. In gram flour add all coating ingredients along with water and make it into a medium consistency better. Now make potato Balls and deep fry them.

Peel potatoes, boil (not too soft) and mash. Add the rest of the geera, salt, onions, garlic and thyme. Add beaten eggs and mix well. Fry the potato balls until they turn golden brown, turning them occasionally. When they are golden brown, take them out with a slotted spoon.
