The ingredients needed to make Multigrain Lauki/Dudhi Thepla:
  1. Make ready 1 cup whole Wheat flour
  2. Prepare 3/4 cup Jowar(Sorghum) flour
  3. Take 1/2 cup Soy flour
  4. Get 2 cups grated Bottle guard
  5. Take 2 tbsp Curd
  6. Get 1/2 tsp Carom seeds
  7. Get 1/4 tsp turmeric powder
  8. Make ready 1/4 tsp red chilli powder
  9. Take 1/4 tsp Asafoetida
  10. Make ready to taste Salt
  11. Prepare 1 tsp finely chopped coriander leaves
  12. Take 1 tbsp Groundnut oil
  13. Take as required Groundnut oil for frying
  14. Get as needed Water or whey (from homrmade paneer)

Gujarati Dudhi na Thepla is a famous breakfast made from wheat flour & bottle gourd. It has a sweet & spicy taste reminiscent of Gujarati cuisine. It is made flat like a roti & then roasted on tava using oil. They are a perfect breakfast item as well as travel food.

Instructions to make Multigrain Lauki/Dudhi Thepla:
  1. In a big & deep bowl take whole wheat, Jowar, Soy flour. Add grated Bottle Gourd, curd, oil, carom seeds, heeng, turmeric powder, red chilli powder, salt, coriander leaves and mix well.
  2. Combine everything together to form a soft & smooth dough using little or no water/whey (leftover from homemade paneer) as required. Note: I didnt use any water or whey as the bottle gourd's natural juice (which i didnt squeeze off) was enough to make the dough. Cover the dough and keep aside for 15 minutes.
  3. Divide the dough into 8-10 equal portions/balls. Roll each ball into round thepla/paratha using some dry flour & cook on medium flame using oil.
  4. Serve hot with curd, Chutney or aloo-tamatar curry. Enjoy Healthy & Nutritious Theplas!
